Family Philosophy

I had a lot of fun today. I got to bake a Red Velvelt Cake. It came out really well. It's for my Grandma's Birthday. HAPPY BIRTHDAY, GRANDMA, I LOVE YOU!!!! I had a good time making it, hence I decided to share the recipe with you. Now, my Mom and I made a few adjustments. Normally this is a layered ckae, however we made it a bundt cake, so there are a few tweaks here and there. We didn't figure out the frosting--there's enough for maybe two bundt cakes--we'll have to work out that kink some other time. So, be warned. Have fun---and don't spill any dye on yourself, I got it all over my hands, what a mess. Oh, and if your Mother helps you, be sure to thank her!

Cake:
2 cups sugar
1/2 pound (2 sticks) butter at room temperature
2 eggs
3 heaping tablespoons cocoa powder
2 ounces red food coloring
2 1/2 cups cake flour
1 teaspoon salt
1 cup buttermilk
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1 tablespoon vinegar

Preheat oven to 350 degrees . In a mixing bowl, cream the sugar and butter, beat until light and fluffy. Add the eggs one at a time, mix well after each addition. Mix cocoa and food coloring together and then add to sugar mixture; mix well. Sift together flour and salt. Add flour mixture to the creamed mixture alternately with the buttermilk. Blend in vanilla. In a small bowl, combine baking soda and vinegar and add to mixture.
Bundt Cake:Pour batter into greased budnt pan, bake for 45-50 minutes or until toothpick inserted comes out clean. Remove from heat and cool completely before frosting.
Layered Cake:Pour batter into 3 (8- inch) round greased and floured pans. Bake for 20-25 minutes, or until toothpick inserted comes out clean. Remove from heat and cool completely before frosting.
Icing:
1 (8 ounce) package cream cheese
1 stick butter, softened
1 cup melted marshmallows
1 (1 pound) box confectioner's sugar
1 cup shredded coconut
1 cup chopped pecans
Blend cream cheese and butter together in a mixing bowl. Add marshmallows and sugar and blend. Fold in coconut and nuts. Bundt: Spread onto cooled cake, don't forget the center. Layered: Spread between layers and on top and sides of cooled cake.
***The coconut is uneccesary, if you're like me and loathe shredded coconut. Also, i didn't put the nuts in the icing, I sprinkled them on top--do what you want, it's your cake. I also used that marshmallow spread, not melted marshmallow, but again it's up to your discretion. Have fun, be creative, who knows, maybe you can do it without turning your hands red!****
